Pancreatin is a composite powder enzyme that is commonly used in the food, medical, textile and leather industries. Obtained by extraction, it is then refined and compounded. Long term exposure to the skin, eyes or mucous membrane can be harmful and is not recommended. While susceptible to alkali-tic conditions, it has stability in higher temperatures and is comprised of protease, lipase and amylase among other chemicals. Pancreatin has an enzyme activity of 4,000u/g and an optimum temperature of 50°C, with a suitable pH of 7.5-8.5.
