Distilling Malt BOORTMALT NV Distilling Malt is typically made from Scottish-grown two-row spring malting barley. It is preferable to use as low a nitrogen content barley as possible as this enhances the spirit yield achieved per tonne of malt. Germination temperatures are controlled between 12 C - 16 C for a period of five days. Kilning is gentle to preserve enzymes and maximise fermentability and temperatures ramp from 50 C rising to a maximum of 74 C.
