Palm oil is today the most produced and consumed edible oil around the globe. It has been widely used in almost all food and feed applications. Palm oil, like most fats and oils consists mainly of triglycerides, phospholipids, sterols and antioxidants like tocopherols and tocotrienoles. Triglycerides stand for the majority of it and can break into smaller parts called fatty acids. The fatty acids are in general divided in 3 groups: saturated, monounsaturated and polyunsaturated fatty acids. Due to their chemical composition the saturated fatty acids are hard and therefore solid at room temperature, while mono- and polyunsaturated fatty acids are liquid at room temperature.
