Sodium Carboxymethyl Sodium carboxymethyl starch (referred to as CMS) is a starch ether derivative derived from carboxymethyl starch. It is soluble in water under room temperature and forms a colorless, transparent and viscous liquid with emulsifying dispersivity and solid dispersivity, but free from corruption and toxicity. As a new food additive with sound liquidity, osmosis, capability of thickening, tackifying and moisturizing, and good oleophobic effect, it may either be used separately or mixed with other thickeners. It is broadly applied in processing of food such as tea, jam, canned condiments, yogurt, ice cream, butter, bread, cake, noodles and instant noodles, etc.
