Cocoa Liquor

Cocoa Liquor is a by-product of the chocolate production process. During grinding, the mill gets hot and the ground cocoa beans become very fine in particle size and the cocoa butter becomes liquid. When the liquor cools it becomes solid. It has the same flavor as unsweetened chocolate with an intense cocoa flavor. This product is mainly used in mixes, batters and dough.
