RightHydro™ Cellulose Gel SC-611 Tabulose is a white to pale yellow, odorless, water dispersible powder. It has a pH value between 6.0 to 8.0 and has a viscosity between 85.0 and 200.0 cps. It is defined as colloid particles dispersing in water. Depending on the quantity of water available, they can form gels or sols. It helps to structure the available water in a food system and provide functionality such as viscosity, gelation, texture, and stabilization of emulsions and foams. It is derived from natural sources such as agar-agar, alginate and carrageenan, which are extracted from seaweed. It is commonly used in food applications such as: milk, whip cream, mayonnaise and jelly.
