Garlic Pesto Stuffed Chicken

Garlic Pesto Stuffed Chicken is made by heating a cast-iron griddle over medium-high heat, until hot. Cut a small incision in each chicken breast to form a pocket for stuffing. In each pocket, stuff 1 tbsp. goat cheese and 2 tbsp. Roasted Garlic Pesto. Season entire chicken with salt and pepper. Spray griddle with cooking spray, and place chicken on hot griddle, searing each side at least 3 minutes; longer if not completely cooked. (When thoroughly cooked, temperature should register 165-degrees Fahrenheit when measured with an instant-read thermometer.) Meanwhile, reheat Roasted Garlic Pesto, pour over chicken breasts, and serve. ROASTED GARLIC PESTO: Preheat oven to 375-degrees Fahrenheit. Cut tops off garlic, and lightly spray each bulb with cooking spray. Wrap in aluminum foil, and roast for 1 hour. Let cool before handling, and squeeze roasted garlic cloves into a food processor. Add basil and pine nuts, and pulse until smooth.
