Vital Wheat Gluten is a natural vegetable protein with a 75% crude protein content procured from wheat which has had its starch removed. It has a good water absorption capacity and viscoelasticity of dough when it is hydrated making it a great source of functional protein. Vital Wheat Gluten can be used in soups, stews, gluten meatballs, intimation ham, canned goods, and as a meat replacement in vegetarian diets.
