Belsagio Mezzano is semi-hard cheese made from pasteurized cow's milk. It is naturally ripened and has 45% fat in dry matter. The cheese has a uniform shape and a smooth rind. It has an ivory to slightly yellow color and is slightly shiny with numerous scattered holes. It has a brittle, firm, and creamy consistency. The cheese's flavor is slightly fruity with a sweet to aromatic piquant and slightly sour taste. It can be used in a variety of foods, recipes, and other applications.
