Gemelli Chicken with Walnut-Garlic Sauce

Gemelli Chicken with Walnut-Garlic Sauce is prepared by preheating the oven to 300F. Slice tops of garlic heads to expose cloves. Sprinkle lightly with 1 tsp olive oil. Wrap heads in foil and roast for 45 minutes to an hour, or until garlic cloves are squishy. Remove from oven; open foil and let cool slightly (and carefully in order not to burn yourself from the steam); then squeeze heads to extract roasted cloves without peel. Place garlic into a blender or food processor. Add walnuts, remaining oil, water, half-and-half, thyme and cayenne. Blend until smooth. ;Meanwhile, brush chicken halves lightly with a bit of olive oil; lightly salt and pepper them and grill until done. Slice into 1 inch pieces and set aside. Cook gemellil until al dente; drain. Toss sauce and chicken slices with hot pasta, then add parsley. Garnish with basil and red bell pepper.
