Garlic Roasted Sweet Potatoes with Arugula

Garlic Roasted Sweet Potatoes with Arugula are made by preheating the oven to 425 degrees. In large roasting pan, combine potatoes, garlic, oil, and salt and pepper, tossing to coat well. Roast for 30 minutes, tossing occasionally, until tender and browned. Add pears, and roast another 10 minutes. Place arugula in a large bowl, add cooked potato mixture, and toss until arugula wilts. Sprinkle with the lemon peel, and serve.
