Slow Cook Vegetarian Chili

Slow Cook Vegetarian Chili is made by mixing In a heavy skillet, sauté onions in olive oil until tender, stirring frequently. Add garlic, and cook 2 minutes. Add cumin, red pepper flakes and any additional spices you’d like; cook 2 minutes longer. Combine all ingredients into a 4-5 quart slow cooker. Cover, and cook on low for about 10 hours. Serve with fresh salsa, green onions, avocados, fresh tomatoes, lettuce and low-fat cheese.
