Greek Moussaka is made by cooking the onions and garlic in 2 tablespoons of the oil until browned. Add the lamb and cook over high heat for 3-4 min. Add the red wine, tomato puree, tomatos, cinnamon, and oregeno. Simmer 30-40 minutes, stirring occasionally. Slice aubergines and brush with olive oil. Fry on both sides until brown. Use half to create a layer along the bottom of a 2.5 liter oven safe dish, season well. Remove cinnamon stick from sauce, spread half of it over aubergines. Repeat with remaining aubergines and sauce. Preheat oven to 200. Melt butter in a nonstick pan, then add flour and cook for one minute. Lower the heat and beat in the milk until slightly thickened, simmer for 10 min, stirring occasionally. Stir in the cheese and nutmeg, season. Pour the topping over the lamb and bake for 30-40 min, until golden brown and bubbling.
