Sodium Nitrite

Sodium Nitrite is a white to slightly yellowish crystalline powder that is very soluble in water and is hygroscopic. Sodium nitrite has been found to inhibit growth of disease-causing microorganisms; give taste and color to the meat; and inhibit lipid oxidation that leads to rancidity. Sodium nitrite is responsible for the desirable red color (or shaded pink) of meat. Sodium nitrite is also able to effectively delay the development of oxidative rancidity.
