High DU Wheat Malt Flour

Muntons™ High DU Wheat Malt is a cream colored, diastatic malt flour derived from malted wheat with a pleasant, slightly sweet and malty flavor profile. It offers higher levels of enzyme activity (alpha amylase activity), enabling reduced inclusion levels.

It also delivers increased volume, improved crust color, additional crust texture, improved crumb softness and stickiness, and enhanced fermentation. It is recommended for bakery blends and baked goods such as bread, crackers, specialty breads, and bread sticks.
