Agarite™

Agarite is a hydrophilic, colloidal substance extracted from certain marine algae of the class Gracilaria, purified by filtration processes and commercialized in powder form. It has a high gelling power which increases viscosity. Agarite is used in icings and doughnut covers, gelatine replacement, water jellies, canned products, dietetic marmalades, yogurts, gelled milk, and other applications with specific textures.
