Sodium Acid Pyrophosphate is a white crystalline powder or granule. In the food industry it acts as a buffering agent, leavening agent, emulsifier, nutrient and a canning preservative. Sodium acid pyrophosphate is used as the leavening agent in baking powder and bakery products, cookies; seafood canning, cured meats and in as a potato treatment to keep the color from darkening.
