Locust Bean Gum - 1st Quality an odorless and tasteless white to yellowish white powder that is obtained from the ground endosperm of the seeds Ceratonia Siliqua L. tree. Also known as carob gum, this product functions as a gelling, thickening, stabilizing, and emulsifier agent. It finds application in baked goods, dairy products, soups, sauces, frozen dairy desserts, fruit preparations, frozen fruit, salad dressing, meat products, alcoholic beverages, and breakfast cereals.
