Ginger Oleor. is an oleoresin obtained by solvents extraction of Zingiber officinale rhizomes from India. The oleoresin has a citrus, citral, fresh, and balsamic olfactory note as well as a bitter, spicy, stinging and warm taste. It is a dark brown, viscous liquid that is insoluble in water but is soluble in oils and organic solvents. The product is used as a flavoring agent and preservative in many meat, seafood, and vegetable preparations in addition to snacks, dressings, soups, and candied ginger in bakery and confectionery items.
