Malt Extract M

Malt Extract M is derived from the process of malting cereal grains. The grains are germinated in water and then dried in mid-germination. During this process, the malting grains develop the enzymes that transform the grain starch to sugars. Malt Extract M has a clean, grainy character and a typical 9 EBC color. Malt Extract M has carbohydrate profiles similar to high-maltose syrup and is rich in free amino acids, vitamins and minerals. It is used in beer and whiskey production, malted milked foods, baked goods, meats, and confectionaries. Compared to Malt Extract M1B, it contains more protein and is darker in color.
