GENU® pectin AC-R is a high ester pectin extracted from citrus peel and standardized by addition of sucrose. It's features include that it is cold soluble in deionized water and it is a cold gelation with soluble solids 44-55% and pH 2-3. Typical application would be in air freshener gels, is a texture free-flowing powder, cream to light tan in colour, and the degree of esterification not specified (typically 64%).
