Diced Prunes are pitted prunes that are cut into ¼” (6.35 mm) mostly cubic-shaped pieces, with some random shapes. Prunes are mainly used to reduce fats–e.g. butter, shortening and oil in baked goods. They help maintain that good, rich, flavor and luxurious feel, while adding sweetness and holding moisture. Diced prunes require little or no modification of the formula, and should comprise up to 50% of its total weight. Diced Prunes go well in most baked products, cereal, and snack mixes.
